Sweet and Sour Chicken

I have this weird thing about pineapple. If I find a recipe that includes it, especially if it is titled Sweet and Sour anything, I have to make it. The weird part is though, I don't like pineapple.

I have no idea where I found this recipe. It was on one of the many blogs I read but I went through the ones I thought it was and can't find it anywhere. So if anyone can point me in the right direction, I'd be forever grateful.

The husband loved this and when I nicely told him I didn't plan on ever making it again, he got huffy and didn't speak to me for a good 15 minutes. I enjoyed the peace and quiet but I also like to make him happy, so I'm sure I'll end up making this again someday.

Sweet and Sour Chicken

1 lb of chicken cooked and shredded
1 clove garlic, minced
1/2 green pepper, diced
1/2 onion, diced
1 cup shredded carrots
1 1/4 cups chicken broth
1/4 cup soy sauce
1/4 cup red wine vinegar
1/3 cup brown sugar
1/2 teaspoon ginger
2 tablespoons cornstarch
1/4 cup water
1 can crushed pineapple with juice

Saute onion, bell pepper, carrots, and garlic in a little olive oil.. Add the broth, soy sauce, vinegar, brown sugar and ginger. Season to taste with salt and pepper. Bring to a full boil. Make a slurry with cornstarch and water; add to pot. Add the shredded chicken and pineapple.

I obviously served it on rice. Mainly because I wasn't sure what else to do with it. I attempted to get the husband to eat his veggies by steaming some broccoli (Steamfresh all the way!) but he wouldn't touch it.

I actually just ate this tonight for dinner, but I like pineapple :) !! I also love sweet and sour meatballs. No pineapple chunks in that recipe, just a little bit of pineapple juice.
