Meal Plan Monday.



I did pretty good with my meal plan last week. I think I stuck to it for the most part. Not if I can only learn to update the blog on the nights I cook.

I had real trouble coming up with a menu this week. My brain is so clouded with thoughts of Christmas that I can't focus on anything else. This morning as I was walking out the door, I finally decided what all to make, and once I got to the store I realized it was all chicken. Oops.

Monday: Tomato, chicken, and rice soup.
Tuesday: Chicken and Biscuits.
Wednesday: Leftovers.
Thursday: Buffalo Chicken Lasagna.
Friday: Leftovers/out.
Saturday: Honey chicken, corn casserole, and garlic green beans.

Hi! Okay, the meatloaf. No promises you'll like it...I'm not sure I totally like it even, but Josh does. So I make it EVERY WEEK. Seriously.

The recipe. Hmmm. There isn't really one. LOL. I just throw a lot of stuff together. This is what I do...
1. Buy the meat loaf mix meat at the store. It's next to the ground beef, chicken, etc. If you can't find it, I've used ground sirloin and couldn't tell the diff. I buy one pack - about 1.5 lbs.
2. I smash up about a cup of ritz crackers and about half a cup of garlic croutons. (Told you this was weird...I just made that mixture up when I didn't have bread crumbs once, and I liked it.)
3. Mix bread crumbs, ground meat, and one beaten egg in a bowl.
4. Line a glass 9 x 13 pan with foil. Butter foil. Form meat mixture into a loafish looking thing in pan.
5. In a small bowl, mix together brown sugar, ketchup, and soy sauce. I have no idea how much of each I use...I just taste it and stop when it's good. I try to end up with about 3/4 cup of the mixture. It has a teriyaki taste, so if you don't like that, you may want to skip this part. Pour that over the meat loaf.
6. Bake the whole thing at 350 for about an hour. You don't want the sauce on top to burn or it's gross. In fact, it may be better to just add the sauce on top the last 10 minutes or so.

This would probably be good with browned onions in it, but Josh doesn't like them. Sometimes, like this week, I buy two packs of meat and double the recipe. The leftovers reheat well in the microwave and it's really good the next day.

Sounds like a tasty week.

My husband wasn't too thrilled with the idea of pumpkin enchiladas, but I want to try them. I figure if he doesn't, he can have some leftovers :).

Do you have a recipe that you can share for the buffalo chicken lasagna?? We love buffalo chicken!

Hey - I'm trying to figure out where to leave this so you'll see it - hopefully this works!

Anyway, I made the meatloaf tonight and tried to pay better attention to what I was doing so I could give you a more accurate recipe. One thing I noticed...I said to try to make 3/4 cup sauce for the top. That is way too much. I used less than that tonight, and I made a double batch, and it was still too much. So for a single batch, maybe 1/4-1/3 cup? Also, tonight I tried using half the sauce mixed into the meat, and then half on top, and I liked that better. The sauce is just too tangy or something for me when there's a lot on top, but Josh likes it. I think you really only need enough to drizzle the top to give it a little bit of extra flavor.

Anyway, I wish I could get this recipe right - meatloaf can be so yummy and so easy, but I just can't seem to get it perfect.
